Blueberry-Ginger Pancake

PREP 10min. COOK 20min. MAKES 12servings

3 large eggs, room temperature 
2 1/4 cups 2% milk
6 Tbsp. butter, melted
3 cups all-purpose flour Tbsp.sugar
3 tsp. baking powder
4 1/2 tsp. ground ginger
3/4  tsp. salt
3 cups fresh or frozen unsweetened blueberries
 Maple syrup 
1. In a large bowl, whisk together eggs, milk, and butter. In a small bowl, whisk together flour, sugar, baking powder, ginger, and salt; add to egg mixture. Spoon batter into Inner Pot. Sprinkle blueberries over top. 

2. Turn dial to Air Fry. Press Temperature and adjust to 325°F. Press Timer and adjust to 20 minutes. Close the Air Frying Lid and press Start. Cook until a knife inserted in center comes out clean. 

3. Cut into squares; serve with warm maple syrup. 

Eric’s Tip
You can substitute ground cinnamon, apple pie spice, or grated lemon zest for the ginger. Raspberries, blackberries, or chopped strawberries are delicious options instead of the blueberries.
