Denver Omelet Frittata

 1 large Yukon gold potato, peeled and sliced
 1  medium onion, thinly sliced
 2 Tbsp. olive oil 
 18 large eggs
 1 1/ 2 tsp. hot pepper sauce
 3/ 4 tsp. salt
 1/ 2 tsp. pepper
 3/ 4 lb. deli ham, chopped
 3/ 4 cup chopped sweet green pepper
 1 1/ 2 cup shredded cheddar cheese, divided
1. Turn dial to Sauté and adjust Temperature to 300°F. Press Timer and adjust to 6 minutes. In the Inner Pot, cook and stir potato and onion in hot oil until potato is lightly browned and onion is softened, 4 to 6 minutes. 

2. In a large bowl, whisk eggs, hot pepper sauce, salt, and pepper; stir in ham, green pepper, and 3/ 4 cup of the cheese. Pour over potato mixture in the Pot. Top with remaining 3/ 4 cup cheese. 

3.Turn dial to Slow Cook. Adjust Timer to 3 hours. Close the Glass Lid and press Start. Cook until eggs are set and a knife inserted in center comes out clean.
