Ingredients 3/4 cup julienned sweet red pepper cup 3/4 chopped onion 3 Tbsp. olive oil 5 large eggs 3/4 cup 2% milk 1 1/2 cup shredded cooked chicken, optional 1 (10-oz.) pkg. frozen chopped spinach, thawed, and squeezed dry 3/4 cup shredded part-skim mozzarella cheese 2 Tbsp. grated Parmesan cheese 3/4 tsp. salt 1/4 tsp. pepper 4 thin slices tomato, for garnish
Directions 1. Turn Dial to Sauté and adjust Temperature to 330°F. Press Timer and adjust to 5 minutes. Press Start. In the Inner Pot, cook and stir the red pepper and onion in hot oil until tender. 2. In a large bowl, beat eggs and milk. Stir in chicken if using, 3/ 4 cup of the spinach, mozzarella and Parmesan cheeses, salt, and pepper (save remaining spinach for another use). Add to vegetables in the Inner Pot; stir gently to combine. 3. Turn dial to Air Fry. Press Temperature and adjust to 300°F. Press Timer and adjust to 15 minutes. Close the Air Frying Lid and press Start. Cook until a knife inserted in the center comes out clean. Cut into wedges.
