Upside-Down Apple-Bacon Pancake

PREP 20min. COOK 30min. MAKES 8servings

6 bacon strips, chopped
2 medium apples, peeled and thinly sliced
3 Tbsp. brown sugar
3/4 tsp. ground cinnamon
1 1/2 cups all-purpose flour
3 Tbsp. granulated sugar
2 1/4 tsp. baking powder
2 large eggs, room temperature 
1 1/4 cups 2% milk
2 Tbsp. butter, melted
1 tsp. vanilla extract
 Optional toppings: Confectioners’ sugar and maple syrup 
1. Turn dial to Sauté and adjust Temperature to 300°F. Press Timer and adjust to 10 minutes. Press Start. In the Inner Pot, cook bacon until crisp, 5 to 8 minutes. Using a slotted spoon, transfer bacon to paper towels to drain, reserving drippings. 

2. Add apple to drippings; cook and stir until crisp-tender, 2 to 3 minutes. Sprinkle with bacon, brown sugar, and cinnamon. 

3. In a large bowl, combine flour, granulated sugar, and baking powder. In a small bowl, combine eggs, milk, butter, and vanilla; stir into dry ingredients just until moistened. Pour over apples in the Inner Pot. 

4. Turn dial to Air Fry. Press Temperature and adjust to 350°F. Press Timer and adjust to 20 minutes. Close the Air Frying Lid and press Start. Cook until a wooden toothpick inserted in center comes out clean. 

5. Carefully remove the Inner Pot and invert onto a serving plate. If desired, dust with confectioners’ sugar and serve with syrup.
