Avocado Watermelon Salad

Ingredients 2 Hass avocados, chopped Juice of 1/2 lime 2 cups chopped watermelon 1 large cucumber, peeled and chopped 8 ounces roasted or pickled beets, chopped 6-8 ounces feta cheese, chopped 1/2 cup thinly sliced red onion Thinly sliced red onion Fresh baby arugula leaves Poppyseed dressing
Directions
1. Once you’ve cut the avocado, squeeze the lime juice over top to prevent browning.
2. For the best presentation you can cut the avocado, watermelon, cucumber, beets, and feta cheese into cubes and arrange on a large serving platter, alternating between each like a checkerboard. Then top with a few slices of red onion and garnish with arugula leaves.
3. For the easiest preparation, you can roughly chop the ingredients and toss together in a bowl to serve as a chopped salad. You may wish to omit the beets if serving as a chopped salad, as the beets will stain the other ingredients purple.
4. Serve drizzled with your favorite poppyseed dressing, or simply drizzle with extra-virgin olive oil and balsamic glaze.
