Grilled Scallops with Green Goddess Dressing
SERVES 3
Ingredients
Green Goddess Dressing
3 anchovies
3 tbsp. chives
3/4 cup parsley
1/4 cup tarragon
1 clove garlic, peeled
1 cup mayonnaise
1 cup sour cream
2 tbsp. lemon juice
1 tsp. sea salt
1/2 tsp. black pepper, ground
Scallop Marinade
1/4 cup olive oil
1/2 tsp. sea salt
1/2 tbsp. black pepper, ground
1 lb. scallops, large
2 cups baby arugula
Directions
1. In a blender, combine all dressing ingredients until smooth.
2. Marinate scallops: in a separate bowl, combine scallops, olive oil, sea salt, and pepper.
3. Grill the scallops on each side on medium heat until done.
4. Divide the arugula onto three plates. Arrange scallops on top. Spoon dressing onto each salad before serving.
Eric’s Tip: I like to add the leftovers the next day with some cooked pasta for a delicious salad.
