Mexican Pizza
SERVES 1
Ingredients
1 flour tortilla, 8 in.
1/2 cup salsa
1 cup shredded cheese, Mexican blend
1/4 cup black beans, drained & rinsed
1 link fully cooked chorizo, cut into thick medallions & quartered
For Serving
1/4 cup scallions, chopped
2 tbsp. cilantro leaves
sliced jalapeño
2 tbsp. Mexican crema
Directions
1. Preheat the oven to 400° F.
2. Grill the tortilla for 2 or 3 minutes on each side.
3. Spread salsa around the tortilla. Top with cheese, then beans, and finally chorizo.
4. Bake in the oven until cheese has melted. Top with scallions, cilantro, and sliced jalapeño. Drizzle with crema immediately before serving.
Eric’s Tip: For a lighter version you can substitute chorizo with turkey or chicken sausage.
