Quinoa Black Bean Burger

Ingredients
Burger
1 cup canned black beans, drained & coarsely mashed
1⁄4 cup quinoa, cooked
1⁄4 cup yellow pepper, diced
2 tbsp. red onion, minced
1 clove garlic, peeled & minced
1⁄4 tsp. coriander
1⁄4 tsp. cumin
1⁄2 tbsp. chili powder
1 egg
Chipotle Aioli
1⁄4 cup mayonnaise
2 tbsp. chipotle hot sauce
1 tsp. lime juice
For Serving
2 sandwich buns
2 slices tomato
2 leaves of lettuce
1⁄4 cup feta, optional
Directions
1. In a bowl, mix burger ingredients. Shape into 2 patties. Refrigerate for 30 minutes.
2. Set time and temperature to 18 minutes at 400o F. Allow the AirFryer to preheat for 2 minutes.
3. Place patties into the Fry Basket. Cook for remaining 16 minutes. Flip halfway through.
4. Make the chipotle aioli: mix together 1⁄4 cup mayonnaise, 2 tbsp. chipotle hot sauce, and 1 tsp. lime juice. Set aside.
5. Arrange quinoa black bean burgers on buns.
6. Top with lettuce, tomato, and chipotle aioli or optional feta before serving.
