Spicy Tilapia
SERVES 2
Ingredients
2 (5-oz.) tilapia fillets
salt and pepper, to taste
1 tbsp. butter, melted
Glaze
1 tsp. vegetable oil
2 tbsp. brown sugar
1 tbsp. rice vinegar
2 tbsp. hoisin sauce
2 tsp. garlic chili paste (sambal oelek)
1⁄2 tsp. soy sauce
1 tsp. cilantro, chopped
Chili Tapenade
1 tsp. vegetable oil
1 clove garlic, minced
2 tbsp. red bell pepper, minced
1 shallot, minced
1 scallion, chopped
1 tbsp. garlic chili paste
1 tsp. brown sugar
1 tsp. soy. sauce
1 tsp. rice vinegar
1 tsp. sesame seeds, toasted
2 tsp. parsley, chopped
Directions
1. Combine glaze ingredients in a small saucepan. Simmer for about 3 minutes, or until thick. Set aside.
2. Make the tapenade: in another saucepan, combine 1 tsp. vegetable oil, garlic, shallot, bell pepper, and scallion. Cook over medium heat until shallot is translucent and garlic is starting to brown.
3. Add remaining tapenade ingredients. Simmer for about 5 minutes, or until a thick paste forms. Set aside to cool.
4. Preheat the AirFryer to 350o F for 2 minutes.
5. Season fish with salt and pepper. Brush with melted butter.
6. Place the fish fillets carefully inside the Fry Basket. Cook for 10 minutes or until fish flakes easily with a fork.
7. Before serving, brush fish with glaze & top with tapenade.
