Air-Fryer Steak Fajitas

Ingredients

2 large tomatoes, seeded and chopped
1⁄2 cup diced red onion 
1⁄4 cup lime juice
1 jalapeno pepper, seeded and minced
3 Tbsp. minced fresh cilantro
2 tsp. ground cumin, divided 
3⁄4 tsp. salt, divided
1 beef flank steak (about 11⁄2 lbs.) 
1 large onion, halved and sliced 
6 whole wheat tortillas (8in.), warmed
Optional: Avocado slices and lime wedges

Directions

  1. For salsa, place first 5 ingredients in a small bowl; stir in 1 tsp. cumin and 1⁄4 tsp. salt. Let stand until serving.
  2. Sprinkle steak with the remaining cumin and salt. Slide the Pizza Rack into Shelf Position 4. Turn the Function Dial to Air Fry, set the temperature to 400° and set the timer to 20 minutes. Place steak on greased Baking Pan; slide pan onto Pizza Rack. Cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 6-8 minutes per side. Remove and let stand 5 minutes.
  3. Meanwhile, place onion on Crisper Tray. Slide the Crisper Tray into Shelf Position 4. Turn the Function Dial to Air Fry, set the temperature to 400° and set the timer to 5 minutes. Cook until crisp-tender, 2-3 minutes, stirring once.
  4. Slice steak thinly across the grain; serve in tortillas with onion and salsa. If desired, serve with avocado slices and lime wedges.
