Avocado Pesto Pasta

Prep Time: 15 minutes  Cook Time: 15 minutes  Serves: 4

Ingredients

1 Hass avocado, peeled and pitted
1/2 cup fresh basil leaves
3 cloves garlic
Juice of 1/2 lime
3 tablespoons extra-virgin olive oil
2 tablespoons water
1/2 teaspoon salt
1/2 teaspoon pepper
12 ounces linguine, fettuccine, or bucatini
Diced tomatoes, to top, optional
Shaved Parmesan cheese, to top, optional

Directions

1. In a food processor, process avocado, basil, garlic, lime juice, olive oil, water, and salt until entirely smooth. Stir in pepper.

2. Meanwhile, prepare the pasta according to the package directions (don’t forget to salt the water). Reserve 1 cup of the cooking liquid, setting aside, before draining.

3. Return the pasta to the pot and fold in the Avocado Pesto, adding the reserved cooking liquid 1 tablespoon at a time until the sauce is your desired consistency. For the best results, do this over extremely low heat, to gently warm the sauce before serving.

4. Serve topped with diced tomatoes and plenty of shaved Parmesan cheese, if desired.
