Cauliflower Risotto with Shrimp

Cauliflower Risotto with Shrimp

Prep Time: 10 minutes  Cook Time: 10 minutes  Serves: 4


2 tablespoons olive oil
1 pound peeled large shrimp
1 large shallot, diced
1 tablespoon minced garlic
16 ounces fresh grated cauliflower rice
1/3 cup dry white wine
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/4 cup chopped fresh parsley
Zest of 1/2 lemon


1. Heat olive oil in a skillet over medium-high heat.

2. Add shrimp and sauté 2 minutes.

3. Add shallot, garlic, and cauliflower rice and sauté an additional 2 minutes.

4. Pour in white wine and heavy cream and bring up to a simmer. Reduce heat to low and let cook, stirring constantly, 2 minutes.

5.Remove from heat and stir in Parmesan cheese before seasoning with salt and pepper to taste. Let rest 2 minutes to thicken before serving topped with chopped fresh parsley, lemon zest, and additional Parmesan cheese, if desired.
