Chicken Parmesan Dinner

Ingredients

1 large egg
1 Tbsp. water
1⁄2  cup panko bread crumbs
1⁄2  cup grated Parmesan cheese
3⁄4 tsp. salt, divided
1 tsp. pepper
1 tsp. garlic powder
4 boneless skinless chicken breast halves (6 oz. each)
Olive oil-flavored cooking spray
4 cups fresh or frozen broccoli florets (about 10 oz.)
1 cup marinara sauce
1 cup shredded mozzarella cheese
1⁄4 cup minced fresh basil, optional

Directions

  1. Lightly coat Baking Pan with cooking spray. In a shallow bowl, whisk egg with water. In a separate shallow bowl, stir together panko, cheese, 1⁄2 tsp. salt, pepper and garlic powder. Dip 1 chicken breast in egg; allow excess to drip off. Then dip in crumb mixture, patting to help coating adhere. Repeat with remaining chicken. Place chicken breasts in Baking Pan. Spritz with cooking spray.
  2. Slide the Pizza Rack into Shelf Position 2. Place the Baking Pan on the Pizza Rack. Turn the Function Dial to Air Fry, set the temperature to 400° and set the timer to 10 minutes. Meanwhile, spread broccoli in a single layer in Crisper Tray. Spritz with cooking spray; sprinkle with remaining 1⁄4 tsp. salt (if broccoli is frozen, break pieces apart). When the timed cycle ends, slide Crisper Tray into Shelf Position 5. Set timer for 10 minutes longer. When cycle ends, remove pan from oven.
  3. Spread marinara sauce over chicken; top with shredded cheese. Return Baking Pan to Pizza Rack. Turn Function Dial to Broil, set temperature to 450° and set timer to 10 minutes. Broil until cheese is golden brown and broccoli is tender, 5-7 minutes. Top with basil if desired.

Eric’s Tip: A quick spritz of cooking spray will keep cheese from sticking to the grater. Plus, cleanup will be a lot easier.
