Coastal Carolina Muffin-Tin Frittatas

Ingredients 3 Tbsp. mayonnaise 1 tsp. lemon juice 1⁄2 tsp.sugar 1⁄4 tsp. seafood seasoning 2/3 cup refrigerated shredded hash brown potatoes 2/3 cup jumbo lump crabmeat 1⁄2 cup chopped smoked sausage 2 Tbsp. chopped roasted sweet red peppers 3 large eggs 1⁄4 cup heavy whipping cream 1 tsp. Louisiana-style hot sauce 1⁄4 tsp. salt 3 bacon strips, cooked and crumbled Thinly sliced green onions
- In a small bowl, combine the mayonnaise, lemon juice, sugar and seafood seasoning. Refrigerate until serving.
- Meanwhile, in a large bowl, combine the potatoes, crab, sausage and red peppers. Divide among cups of a greased 6-cup muffin tin that fits in the unit. In another large bowl, whisk the eggs, cream, hot sauce and salt. Pour over potato mixture. Top with bacon.
- Slide the Pizza Rack into Shelf Position 5. Place the muffin tin on the Pizza Rack. Turn the Function Dial to Bake, set temperature to 350° and set timer to 30 minutes. Bake until a knife inserted in center comes out clean, 30-35 minutes. Serve with sauce and sliced green onions.
