Grilled Asparagus & Feta
1 lb. asparagus, trimmed
1/4 cup extra virgin olive oil
1/2 tsp. sea salt
1/2 tsp. black pepper, ground
juice of 1 lemon
1/2 cup feta, crumbled
1/4 cup pine nuts, lightly toasted
1 tsp. dried oregano
1. Coat asparagus with olive oil. Season with salt and pepper.
2. Preheat the Grill Pan on medium heat. Gill asparagus until cooked.
3. Sprinkle asparagus with lemon juice, feta, pine nuts, and dried oregano before serving.
Eric’s Tip: If fresh asparagus is not available, green beans can be substituted.
