Grilled Chicken, Mango & Blue Cheese Tortillas

Ingredients 1 boneless skinless chicken breast (8 oz.) 1 tsp. blackened seasoning 3⁄4 cup plain yogurt 11⁄2 tsp. grated lime zest 2 Tbsp. lime juice 1⁄4 tsp. salt 1/8 tsp. pepper 1 cup finely chopped peeled mango 1/3 cup finely chopped red onion 4 flour tortillas (8 in.) 1⁄2 cup crumbled blue cheese 2 Tbsp. minced fresh cilantro
- Slide the Grill Plate into Shelf Position 6. Turn the Function Dial to Grill, set temperature to 450° and set timer to 25 minutes. Preheat the grill for 10 minutes. Meanwhile, sprinkle chicken with seasoning.
- When the grill has preheated, grease it lightly. Place chicken on the Grill Plate. Cook until a thermometer reads 165°, 6-8 minutes on each side.
- Meanwhile, in a small bowl, mix yogurt, lime zest, lime juice, salt and pepper. Cool chicken slightly; finely chop and transfer to a small bowl. Stir in mango and onion.
- Working in 2 batches, place the tortillas on the Grill Plate. Return the Grill Plate to Shelf Position 6. Turn the Function Dial to Grill, set the temperature to 450°, and set the timer to 10 minutes. Grill tortillas until puffed, 2-3 minutes. Turn; top with chicken mixture and blue cheese. Grill until bottoms of tortillas are lightly browned, 2-3 minutes. Drizzle with yogurt mixture; sprinkle with cilantro. Cut each tortilla into 4 wedges.
