Grilled Chicken, Mango & Blue Cheese Tortillas

Ingredients
1 boneless skinless chicken breast (8 oz.)
1 tsp. blackened seasoning 
3⁄4 cup plain yogurt
11⁄2 tsp. grated lime zest 
2 Tbsp. lime juice
1⁄4 tsp. salt
1/8 tsp. pepper
1 cup finely chopped peeled mango 
1/3 cup finely chopped red onion
4 flour tortillas (8 in.)
1⁄2 cup crumbled blue cheese
2 Tbsp. minced fresh cilantro

Directions

  1. Slide the Grill Plate into Shelf Position 6. Turn the Function Dial to Grill, set temperature to 450° and set timer to 25 minutes. Preheat the grill for 10 minutes. Meanwhile, sprinkle chicken with seasoning.
  2. When the grill has preheated, grease it lightly. Place chicken on the Grill Plate. Cook until a thermometer reads 165°, 6-8 minutes on each side.
  3. Meanwhile, in a small bowl, mix yogurt, lime zest, lime juice, salt and pepper. Cool chicken slightly; finely chop and transfer to a small bowl. Stir in mango and onion.
  4. Working in 2 batches, place the tortillas on the Grill Plate. Return the Grill Plate to Shelf Position 6. Turn the Function Dial to Grill, set the temperature to 450°, and set the timer to 10 minutes. Grill tortillas until puffed, 2-3 minutes. Turn; top with chicken mixture and blue cheese. Grill until bottoms of tortillas are lightly browned, 2-3 minutes. Drizzle with yogurt mixture; sprinkle with cilantro. Cut each tortilla into 4 wedges.

Eric’s Tip: Swap flour tortillas with whole wheat ones and enjoy a health boost from twice the fiber.
