Grilled Cilantro Lime Chicken with Fresh Salsa



2 tbsp. olive oil
zest of 2 limes
1⁄4 cup fresh lime juice
1 tsp. cumin
1⁄2 tsp. sugar
1⁄2 tsp. salt
1⁄4 tsp. ground black pepper
3 cloves garlic, minced
1⁄2 cup chopped cilantro
2 lb boneless chicken breasts, pounded

1 pint tri-color cherry tomatoes, halved
1⁄4 red onion, diced
1⁄2 jalapeño pepper, sliced thinly
1 tsp. lime zest
2 tsp. lime juice
1⁄4 tsp. salt
1 tsp. crushed red pepper flakes
1 avocado, peeled & dice


1. Combine the olive oil, lime juice and zest, cumin, sugar, salt, ground black pepper, garlic, and cilantro in a glass baking dish. Add the chicken breasts and marinate for 30 mins.

2. Place the Wonder Cooker’s Grill Pan on the stove top. Preheat the Grill Pan over medium-high heat and then grill each side
of the chicken breasts for 5 mins.

3. Combine the salsa ingredients in a bowl. Serve the salsa on top of the chicken breasts.

Eric’s Tip: If you substitute skirt steak for the chicken, you’ll get a delicious carne asada-style dish.
