Grilled Dijon Pork Roast
3 OZ. COOKED PORK 149 cal., 5g fat (2g sat. fat), 56mg chol., 213mg sod., 2g carb. (1g sugars, 0 fiber), 22g pro. PREP 10 min. + marinating GRILL 1 hour + standing SERVES 12
Ingredients 1/3 cup balsamic vinegar 3 Tbsp. Dijon mustard 1 Tbsp. honey 1 tsp.salt 1 boneless pork loin roast (3 to 4 lbs.)
- In a large bowl or shallow dish, whisk vinegar, mustard, honey and salt. Add pork and turn to coat. Cover and refrigerate at least 8 hours or overnight.
- Slide the Grill Plate into Shelf Position 6. Turn the Function Dial to Grill, set the temperature to 325° and set the timer to 85 minutes. Let the grill preheat for 10 minutes.
- Drain pork, discarding marinade. When the grill has preheated, place pork on the Grill Plate. Cook until a thermometer inserted in pork reads 145°, 60-75 minutes, turning occasionally. Let stand for 10 minutes before slicing.
