Grilled Peach & Pineapple Salsa


2 peaches, pitted
1 cup pineapple, sliced
1/2 red onion, sliced in rings
1/2 red pepper, sliced
2 tbsp. cilantro, chopped
1 tbsp. lime juice
1/2 jalapeño
1 tsp. sugar
1/2 tsp. sea salt
blue corn tortilla chips, to serve


1. Grill fruit and vegetables whole on all sides before chopping.

2. Dice the fruits and vegetables. Toss with cilantro, lime juice, jalapeño, sugar, and sea salt.

3. Serve grilled fruit with chips.

Eric’s Tip: If there is any left over, I like to add it to my Jasmine rice for a delicious island-style side dish.
