Ground Pound Cake & Fruit
6 slices pound cake
3 peaches, sliced & pitted
3 bananas, peeled & sliced
24 strawberries, large
1/2 cup simple syrup
1/4 cup raspberry sauce
1 cup whipped cream
6 mint leaves, for garnish
1. Arrange the pound cake, peaches, bananas, and strawberries on the Grill Pan. Cook on both sides to desired doneness.
2. Toss the fruit with simple syrup. Set aside.
3. Plate the pound cake with grilled fruit.
4. Top with raspberry sauce and whipped cream. Garnish with mint leaves immediately before serving.
Eric’s Tip: Another delicious variation on this recipe is to slice a corn muffin in half and grill. The fruit and cream compliment the corn’s sweetness.
