Grilled Scallops with a Lemony Salsa Verde
SERVES 6
Ingredients
peel of 1⁄2 lemon, chopped
zest of 1 lemon
1⁄2 cup cilantro, chopped
1⁄2 cup parsley, chopped
2 cloves garlic, chopped
1 shallot, chopped
1 1⁄2 tbsp. capers, chopped
1⁄2 tsp. kosher salt
1⁄4 tsp. ground black pepper
1⁄2 cup olive oil
2 tbsp. olive oil
1 1⁄2 lb U12 scallops
Directions
1. Combine the salsa verde ingredients in a bowl and let sit for 15 mins.
2. Place the Wonder Cooker’s Roaster Pan on the stove top. Heat 2 tbsp. olive oil over medium-high heat.
3. Grill each side of the scallops for 3–5 mins. per side
4. Serve with the salsa verde.
Eric’s Tip: I love to grill and then cool these scallops
to use as a refreshing salad topper. Just toss baby arugula and shaved fennel with the salsa verde and add the scallops.
