Grilled Veggie Kabobs

SERVES 6

Ingredients

1 red peppers, large dice
1 yellow pepper, large dice
1 zucchini, 1 inch rounds
1 yellow squash, 1 inch rounds
12 medium mushrooms
1 red onion, large dice

Marinade
3/4 cup cider vinegar
2 tbsp. basil, chopped
2 tbsp. parsley, chopped
2 cloves garlic, peeled & minced
1 tbsp. sea salt
1 tsp. ground black pepper

Directions

1. Skewer the vegetables.

2. Marinade: in a bowl, combine vinegar, herbs, garlic, sea salt, and pepper. Pour over vegetable skewers. Marinate for 1 hour.

3. Drain the marinade from the kabobs. Arrange kabobs on the Grill Pan, rotating until vegetables are tender.

4. Serve over spinach or with your favorite vegetable.

Eric’s Tip: I always have a warm pita schmeared with hummus ready to wrap around the kabobs when they come hot off the Grill Pan.
