Grilled Watermelon Salad
1 (2 in. thick) slice watermelon, with rind
1 cup micro greens
1 tbsp. extra virgin olive oil
1 tsp. lemon juice
sea salt & pepper
1 cup feta cheese
1 small red onion, sliced thin
1 cup strawberries, sliced
1/3 cup pine nuts. toasted
1. Grill watermelon on both sides.
2. In a bowl, toss micro greens with olive oil, lemon juice, sea salt, and pepper.
3. Sprinkle watermelon with feta, red onion, strawberries, and pine nuts.
4. Top with micro greens. Cut into slices before serving.
Eric’s Tip: You can very easily turn this salad into an entrée by adding grilled chicken or shrimp, but my personal favorite is adding some thin sliced prosciutto.
