Honey-Lime Roasted Chicken

4 OZ. COOKED CHICKEN 294 cal., 16g fat (4g sat. fat), 90mg chol., 354mg sod., 8g carb. (7g sugars, 0 fiber), 28g pro.
PREP 10 min. BAKE 1 hour + standing SERVES 10
Ingredients

1 whole roasting chicken (5 to 6 lbs.) 
1⁄4 cup lime juice
2 Tbsp. honey
1 Tbsp. stone-ground mustard
or spicy brown mustard 
1 tsp. salt
1 tsp. ground cumin

Directions

  1. Carefully loosen the skin from the entire chicken. Place chicken on Grill Plate. Whisk lime juice, honey, mustard, salt and cumin. Using a turkey baster, baste under the chicken skin with half the lime juice mixture. Tie drumsticks together. Brush chicken with additional lime mixture.
  2. Slide the Grill Plate into Shelf Position 6. Turn the Function Dial to Pizza/Bake, set the temperature to 350° and set the timer to 90 minutes; roast until a thermometer inserted in thickest part of thigh reads 170°-175°, 1-11⁄2 hours. (Cover loosely with foil if chicken browns too quickly.) Let stand for 10 minutes before carving.
