Lamb & Goat Cheese Burger
1 lb. ground lamb
1/2 onion, peeled & minced
2 sprigs rosemary, chopped
1 clove garlic, peeled & minced
2 tbsp. olive oil
1 tsp. sea salt
1 tsp. black pepper ground
4 oz. goat cheese, crumbled
3 brioche hamburger rolls
2 tbsp. margarine
1. In a bowl, combine ground lamb, onion, rosemary, and garlic. Form into three patties.
2. Brush each burger with olive oil. Season with sea salt and pepper. 3. Grill to desired temperature. Top with goat cheese.
4. Spread margarine over each roll. Grill to desired doneness.
5. Arrange burgers onto the rolls. Serve with your favorite side dish.
Eric’s Tip: If lamb is not available or just not to your liking, you can substitute any ground meat for this recipe. I’ve even ground up fresh fish in my food processor and made salmon sliders!
