Ingredients

3 Tbsp. lime juice
1 Tbsp. sesame oil
11⁄2 tsp. reduced-sodium soy sauce
1 garlic clove, minced
1⁄2  tsp. grated fresh ginger root
or 1⁄4 tsp. ground ginger
1⁄2  tsp.salt
1/8 tsp. pepper
1  medium eggplant (11⁄4 lbs.), 
cut lengthwise into 1⁄2-in. slices
2  tsp. honey
1/8 tsp. crushed red pepper flakes 
Thinly sliced green onion and sesame seeds

Directions

1. In a small bowl, whisk first 7 ingredients until blended; brush 2 Tbsp. juice mixture over both sides of eggplant slices. Slide the Grill Plate into Shelf Position 6. Turn the Function Dial to Grill, set the temperature to 425° and set timer to 20 minutes. Let the grill preheat for 5 minutes.

2. Place eggplant on Grill Plate, in batches if necessary, and grill until tender, 4-6 minutes on each side.

3. Transfer grilled eggplant to a serving plate. Stir honey and pepper flakes into remaining juice mixture; drizzle over eggplant. Sprinkle with sliced green onion and sesame seeds.

Eric’s Tip: Bigger isn’t always better! Select the smallest eggplants you can find. The smaller their size, the less bitter they are.
