Pan-Seared Herb Pork Chops With Apple Slaw
SERVES 4
Ingredients
4 (8 oz.) bone-in pork chops
3 tsp. dry sage
1 tsp. dry basil
1 tsp. dry oregano
1⁄2 tsp. ground pepper
1 tsp. salt
4 tbsp. olive oil
2 Granny Smith apples, julienned
4 cups shredded green cabbage
1 cup carrots, julienned
2 tbsp. cider vinegar
1⁄2 cup Greek yogurt
1⁄2 tsp. salt
1 tsp. ground pepper
2 tbsp. honey
Directions
- In a small bowl, combine sage, basil, oregano, salt, ground pepper, and olive oil.
- Coat pork chops with herb mixture. Marinate for 30 minutes.
- In a separate bowl, combine Granny Smith apples, grain cabbage, carrots, cider vinegar, Greek yogurt, salt, pepper, and honey. Mix well and refrigerate for 30 minutes.
- Place the Copper Chef on medium-high heat. Sear the pork chops for 5-8 minutes on each side.
- Serve with apple slaw.
Eric’s Tip: Toss the apples immediately in the vinegar to prevent oxidation. I also like to switch it up a bit and use Bosc pears when they are in season
