Pan-Seared Herb Pork Chops With Apple Slaw

SERVES 4

  Ingredients 
4 (8 oz.) bone-in pork chops
3 tsp. dry sage
1 tsp. dry basil
1 tsp. dry oregano
1⁄2 tsp. ground pepper
1 tsp. salt
4 tbsp. olive oil
2 Granny Smith apples, julienned
4 cups shredded green cabbage
1 cup carrots, julienned
2 tbsp. cider vinegar
1⁄2 cup Greek yogurt
1⁄2 tsp. salt
1 tsp. ground pepper
2 tbsp. honey

Directions

  1. In a small bowl, combine sage, basil, oregano, salt, ground pepper, and olive oil.
  2. Coat pork chops with herb mixture. Marinate for 30 minutes.
  3. In a separate bowl, combine Granny Smith apples, grain cabbage, carrots, cider vinegar, Greek yogurt, salt, pepper, and honey. Mix well and refrigerate for 30 minutes.
  4. Place the Copper Chef on medium-high heat. Sear the pork chops for 5-8 minutes on each side.
  5. Serve with apple slaw.

Eric’s Tip: Toss the apples immediately in the vinegar to prevent oxidation. I also like to switch it up a bit and use Bosc pears when they are in season
