Penne alla Vodka
1 lb. cooked penne pasta
3 tbsp. olive oil
1⁄2 onion, peeled and minced
3 cloves garlic, peeled and minced
1⁄4 cup vodka
3⁄4 cup crushed tomato
1 tsp. oregano, dried
2 tsp. basil, dried
1 qt. heavy cream
1⁄2 tsp. sea salt
1⁄2 tsp. ground black pepper
- Place the Copper Chef on medium-high heat. When the pan is hot, add the olive oil. Sauté the onions and garlic until slightly golden.
- Add the vodka, tomatoes, oregano, and basil. Cook for 4 minutes.
- Add the cream. Bring to a boil and then reduce the sauce until slightly thickened.
- Reduce heat to a simmer. Add the pasta, sea salt, and black pepper. Cook until the pasta is hot and coated well.
Eric’s Tip: When cooking with any wine, beer or liquor, always cook with what you like to drink. If you don’t like to drink it, you won’t like it in your recipe either!
