Pesto White Pizza
1 pizza dough, thin crust
1/3 cup pesto sauce
1 cup ricotta
8 oz. fresh mozzarella, sliced thin
1 large Roma tomato, sliced thin & cut into half- moons
2 tbsp. Parmesan cheese, grated
1 pinch red pepper flakes
salt and pepper, to taste
1. Preheat the oven to 450° F.
2. Arrange the pizza dough on the Grill Pan. Grill on medium heat until cooked on both sides.
3. Remove dough from heat. Brush pesto over the dough.
Layer with ricotta, mozzarella, tomatoes, Parmesan, and red pepper flakes. Season with salt and pepper.
4. Place the Grill Pan into the oven. Cook until pizza is lightly golden and cheese is melted.
Eric’s Tip: I love taking that leftover rotisserie chicken and adding it to this pizza.
