Porcini-Crusted Rack of Lamb


Porcini Crust
1/4 cup dried porcini mushrooms, blended to a powder
1 cup breadcrumbs
3 tbsp. Parmesan cheese
2 tbsp. parsley, chopped
1 tbsp. mint, chopped

1 rack of lamb, domestic
1 tbsp. olive oil
1/2 tsp. sea salt
1/2 tsp. ground black pepper


1. Porcini crust: combine porcini powder, breadcrumbs, Parmesan cheese, parsley, and mint in a bowl. Set aside.

2. Preheat the oven to 400° F.

3. Brush lamb with olive oil. Season with salt and pepper. Press porcini crust onto the lamb.

4. Arrange lamb carefully onto the Grill Pan. Cook in the oven to desired doneness.

5. Let rest before serving.

Eric’s Tip: If you can’t find a rack of lamb you can also use chops or even skewer lamb cubes.
