Spiced Apricot Baked Oatmeal

Ingredients 3⁄4 cup packed brown sugar 3 tsp. pumpkin pies pice 2 tsp. baking powder 1⁄2 tsp.salt 1⁄4 tsp. ground cardamom 3 cups old-fashioned oats 1⁄2 cup chopped dried apricots 1⁄2 cup chopped pecans,toasted 3 large eggs 11⁄2 cupsfat-freemilk 1⁄2 cup unsweetened applesauce 11⁄2 tsp.vanilla extract 1⁄4 cup butter, melted TOPPINGS 3 cups vanilla yogurt 1⁄2 cup apricot preserves, warmed
Directions
- Preheat oven to 350°, In a large bowl, mix the first 5 ingredients; stir in oats, apricots and pecans. In another bowl, whisk together eggs, milk, applesauce and vanilla; gradually whisk in melted butter. Stir into oat mixture. Transfer to a greased 11×7-in. baking dish that fits into the unit.
- Slide the Pizza Rack into Shelf Position 5. Place the baking dish on the Pizza Rack. Turn the Function Dial to Pizza/Bake, set the temperature to 350° and set tier to 30 minutes. Bake until set and edges are lightly browned, 25-30 minutes. Cut into 12 portions; serve with toppings.
Eric’s Tip: Save some oatmeal for later! Freeze cooled portions in airtight freezer containers. Reheat by popping them back into the PowerXL Air Fryer Grill, warming for 4-5 minutes or until heated through. Serve with toppings.
